I made this a few times and came out good especially if you use fresh coconut.

Keto Pan De Coco


  • 1 TBSP Yeast
  • 1 tsp Inulin powder
  • 1 tsp Nutritional Yeast
  • 1 tsp Psyllium Husk
  • 2 TBSP warm water
  • 1 scoop of Whey Protein
  • 3 TBSP ERYTHRITOL (I used Truvia)
  • 1/4 tsp salt
  • 3 egg yolk
  • 6 oz Mozzarella Cheese
  • 1 1/4 cup Almond Flour
  • 9 TBSP or more Coconut Filling (recipe link above)
  • 1 egg (for egg wash before baking)


  • Heat the oven for 350F
  • Mix the inulin powder and yeast into the warm water. Let it sit for about 10 minutes to activate.
  • Melt Mozzarella Cheese in the microwave.
  • Put melted cheese into the mixing bowl. Add in egg yolk. Mix it well.
  • Add flour, whey protein powder,1 tsp Nutritional Yeast,1 tsp Psyllium Husk, sweetener, and activated the yeast and mix it well.
  • With wet hands, lightly form a small dough into a ball. Flatten the ball and add the filling.
  • Put it in the baking pan lined with parchment paper.
  • Turn the oven off. Put your bread in the oven uncovered for 10 minutes and let it rise.
  • After the bread rise, turn the oven on to 350F with the bread still inside and cook it for about 10 minutes or more. Start checking at 10 minutes.
