Keto Filipino Pandesal

I am so happy this turned out so good and it is delicious!
So easy to make too.  Recipe adapted from @ketocoffeeandlipstick.

Keto Filipino Pandesal

Ingredients

  • 1 TBSP Dry Yeast
  • 1 teaspoon Inulin powder (check amazon)
  • 1 cup Lupin Flour (got mine at Amazon)
  • 2 eggs
  • 2 TBSP Keto approved sweetener (I used Truvia)
  • 3 TBSP butter
  • 1 teaspoon baking powder
  • 1/2 teaspoon Xanthan Gum
  • 1 cup Unsweetened Almond milk
  • 1 1/2 TBSP Psyllium Husk Powder
  • 1/4 almond flour for coating

Instructions

  • Heat the oven for 400F
  • Microwave the Almond milk for 30 seconds or until warm.
  • Mix the inulin powder and yeast into the warm milk. Let it set for about 10 minutes to activate.
  • In the mixing bowl or food processor, mix Lupin flour, psyllium husk, xanthan gum, baking powder, and sweetener. Mix well.
  • Add in milk with the activated yeast, eggs, and melted butter. Mix well. It will be sticky.
  • Wet hands is the key to handle a sticky dough. Form a ball of dough into your hands and coat it with the almond flour. You should be able to make 9 pretty easy.
  • Put it in the square pan right next to each other (just like the photo above).
  • Turn off the oven that you preheated 400F. Put the bread uncovered in the oven for 10 minutes and let it rise.
  • Leave it in the oven and turn the oven on for 400F and cook the bread for 10 minutes or more if you like it more brown.

Notes

The key is wet hands. Make sure to wet your hands each time you form a dough ball into your palms.
