Keto Chicken Curry

Keto Chicken Curry

Ingredients

  • 1 1/2 lb chicken breast cut into cubes
  • 1/4 cup chopped onions (I used sweet Vidalia onions)
  • 2 cloves garlic chopped
  • 1/2 tsp ground ginger or shred fresh ginger
  • 2 TBSP Olive oil
  • 1 & 1/2 Tbsp Curry Powder
  • 1/2 tsp salt
  • 4 TBSP Rao's Sauce (I got it at Publix)
  • 1/4 black pepper ground
  • 1/3 Organic Chicken stock
  • 2 cups Unsweetened Almond milk OR 1 can coconut milk (more carbs in coconut milk)
  • 1/4 tsp xanthan gum (for thickener) don't use if you're using coconut milk)

Instructions

  • In a large pan, heat 2 TBSP olive oil.
  • Add chopped onions and stir for a minute over medium heat.
  • Add 2 cloves chopped garlic, 1/2 tsp ground ginger and stir for a minute.
  • Add 4 TBSP Rao's sauce and stir. Add 1 & 1/2 TBSP curry powder and cook for 1 minute. Stir occasionally.
  • Add cubed chicken breast and stir. Add 1/2 tsp salt and 1/4 tsp black pepper.
  • Add 1/3 cup chicken stock. Cover and cook for 10 minutes over medium heat.
  • Add 2 cups unsweetened almond milk OR 1 can coconut milk. Cover and cook for 10 minutes over medium heat.
  • Add 1/4 tsp of xanthan gum as a thickener. If you're using coconut milk, no need to add xanthan gum. Cook for another 5 minutes over medium heat or until thickened. Remove from heat and enjoy!
