Keto Cauliflower Cream Soup

Notes
It mashed best if you have an immersion blender. The nutrition facts may vary on what brand you use. I used the Carb manager app to calculate the nutrition facts.
Ingredients
- 1 small onion, chopped
- 1 rib celery, chopped
- 1 cloves garlic
- salt to taste
- 1 head cauliflower, cored and separated into florets
- 32 oz chicken broth or stock
- 1/2 cup heavy cream
- 3 strips cooked bacon, chopped
- 2 cups of water
- some parsley (optional)
Instructions
- Cook bacon in a skillet over medium heat until crisp. Transfer cooked bacon to a paper towel-lined plate to drain.
- Stir onion and celery in the hot pan where you cooked the bacon. Add garlic and salt, and stir for 1 minute. Stir in cauliflower, chicken broth, and water. Bring to a boil, reduce heat to medium-low and simmer until cauliflower is tender about 30 minutes.
- Puree the soup using a blender until smooth.
- Pour the puree back to the pan and heat to low, season with salt. Pour in heavy whipping cream and stir until warmed.
- Transfer to a bowl and cool to room temperature. Stir in bacon and parsley. Enjoy!
